Single malts & mixed tapes: Seattle bar culture something to treasure

When in Seat­tle, seek Lib­erty in late af­ter­noon. No, I’m not talking about the promised pledge that precedes “and jus­tice for all.” I’m talking about the bar.

Lib­erty, owned by nationally acclaimed bar-badasses Kei­th Waldbauer and Andrew Friedman, is an ochre-hued Capitol Hill enclave that excels at Ital­ian es­presso and Japan’s art of sushi prepa­rations. The bar­tenders are gregar­ious (maybe it’s the es­presso?), the iPod is de­lightfully lacking Top 40, and al­though they can brew you a mean java, that’s not the rea­son you go.

Seek out Lib­erty at dusk, and these guys will guide you into your night with the fi­nesse of shamans in a sweat lodge. Ask for a customized flight of Japanese whiskeys, and enjoy sampling a 21-year Nikka against an 18-year Yamazaki, both along­side a 17-year Hi­biki or a 12-year Chita. The se­lection is im­pressive, the staff well versed and the best part is that four half-ounce pours will run you be­tween $9 and $20. As the single malts take ef­fect, slip off to the cav­ernous, soft­ly lit back room crammed full of couches and the low glow of a gi­ant flatscreen. Japanese whiskey goes down oh-so-sweet with live American football.

COCKTAIL PICK: The Emerald City — Cognac, green Chartreuse, sweet vermouth, bitters, and a lemon twist; $9.

ROB ROY

Con­tin­u­ing on in your tromp through the Seat­tle night, head to Rob Roy. Manned by the de­lightful Miss Anu Apte and her row­dy bar staff, Rob Roy has a def­i­nite sexy, boudoir feel to it. The walls are a mix of black leather pan­els and gilded frames surrounding eclectic art. Touches like bath­room walls littered with in­tentional graf­fiti add a bit of urban playfulness.

Sexy and playful are two themes that certainly con­tinue on the joint’s drink list, where you can or­der a sultry Latin Tri­fecta (tequi­la, Cynar, sh­erry and bitters; $10) or join in a jab at the classic Dark & Stormy with their Dark & Fer­net-y (Fer­net Branca, lime and gin­ger beer; $10).

BEST NIGHT: Ana­log Tuesdays, where the only mu­sic playing is ei­ther on vinyl or cas­sette tape. Bring in your own fa­vorites and you’ll earn a free cocktail if you im­press the staff.
