Single malts & mixed tapes: Seattle bar culture something to treasure
When in Seattle, seek Liberty in late afternoon. No, I’m not talking about the promised pledge that precedes “and justice for all.” I’m talking about the bar.
Liberty, owned by nationally acclaimed bar-badasses Keith Waldbauer and Andrew Friedman, is an ochre-hued Capitol Hill enclave that excels at Italian espresso and Japan’s art of sushi preparations. The bartenders are gregarious (maybe it’s the espresso?), the iPod is delightfully lacking Top 40, and although they can brew you a mean java, that’s not the reason you go.
Seek out Liberty at dusk, and these guys will guide you into your night with the finesse of shamans in a sweat lodge. Ask for a customized flight of Japanese whiskeys, and enjoy sampling a 21-year Nikka against an 18-year Yamazaki, both alongside a 17-year Hibiki or a 12-year Chita. The selection is impressive, the staff well versed and the best part is that four half-ounce pours will run you between $9 and $20. As the single malts take effect, slip off to the cavernous, softly lit back room crammed full of couches and the low glow of a giant flatscreen. Japanese whiskey goes down oh-so-sweet with live American football.

ROB ROY
Continuing on in your tromp through the Seattle night, head to Rob Roy. Manned by the delightful Miss Anu Apte and her rowdy bar staff, Rob Roy has a definite sexy, boudoir feel to it. The walls are a mix of black leather panels and gilded frames surrounding eclectic art. Touches like bathroom walls littered with intentional graffiti add a bit of urban playfulness.
Sexy and playful are two themes that certainly continue on the joint’s drink list, where you can order a sultry Latin Trifecta (tequila, Cynar, sherry and bitters; $10) or join in a jab at the classic Dark & Stormy with their Dark & Fernet-y (Fernet Branca, lime and ginger beer; $10).
BEST NIGHT: Analog Tuesdays, where the only music playing is either on vinyl or cassette tape. Bring in your own favorites and you’ll earn a free cocktail if you impress the staff.
